Ingredients

  • 2.5 mashed bananas
  • quarter cup flax seeds
  • 1.5 tablespoons water
  • 1 1/4 Cup sugar (half granulated and half brown)
  • 2 Cups flour (half all purpose half whole wheat)
  • 3 tablespoons cacao powder
  • 2 tablespoons cinnamon
  • 1-teaspoon salt
  • 1 teaspoon baking soda
  • 2 tablespoons vanilla
  • 1-cup unsweetened organic applesauce
  • 1 egg
  • 1 Small cube of butter

Method

  • Preheat oven 350°F. Mash up bananas and set aside. In large bowl, cream butter and sugar and add a little water to help mix. In medium bowl, combine flour,cacao, baking soda, and salt and cinnamon; set aside. Add egg, vanilla and banana; mix well. Add flour mixture slowly alternating with applesauce and mix in flax seeds; blend thoroughly but do not over mix. Pour into prepared pans. Bake 17-20 minutes or until toothpick inserted comes out clean. Cool 10 minutes in pan on rack; remove and cool completely before decorating.
