Ingredients

  • 1/2 c. egg whites (about 3 to 3 1/2)
  • 1/4 tsp. salt
  • 1/4 tsp. cream of tartar
  • 1 c. sugar
  • 1 tsp. vanilla
  • cocoa to sprinkle
  • chocolate (molding chocolate best)

Method

  • Briefly beat eggs at moderate slow speed until foamy.
  • Add salt and cream of tartar.
  • Increase speed to moderate and beat another minute until whites hold soft shape.
  • Continue to beat and add sugar, 1 tablespoon at a time.
  • Add vanilla when half the sugar has been added.
  • Increase speed to high and beat 7 to 8 minutes until meringue is very stiff and the sugar is dissolved.
