Ingredients
- 1/2 c. egg whites (about 3 to 3 1/2)
- 1/4 tsp. salt
- 1/4 tsp. cream of tartar
- 1 c. sugar
- 1 tsp. vanilla
- cocoa to sprinkle
- chocolate (molding chocolate best)
Method
- Briefly beat eggs at moderate slow speed until foamy.
- Add salt and cream of tartar.
- Increase speed to moderate and beat another minute until whites hold soft shape.
- Continue to beat and add sugar, 1 tablespoon at a time.
- Add vanilla when half the sugar has been added.
- Increase speed to high and beat 7 to 8 minutes until meringue is very stiff and the sugar is dissolved.
