Ingredients

  • 5 to 6 c. unsifted flour
  • 2/3 c. sugar
  • 1 tsp. salt
  • 2 pkg. dry yeast
  • 1/3 c. margarine, softened
  • 1 c. very warm tap water
  • 1 c. mashed potatoes, at room temperature
  • 2 eggs, at room temperature
  • 1/2 c. margarine
  • 2 c. light brown sugar, firmly packed
  • 2 Tbsp. orange juice
  • 1 tsp. ground cinnamon
  • 1 tsp. grated orange peel

Method

  • In a large bowl, thoroughly mix 1 1/2 cups flour, sugar, salt and undissolved yeast.
  • Add softened margarine.
  • Gradually add tap water to dry ingredients and beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally.
  • Add potatoes, eggs and 1/2 cup of flour.
  • Beat at high speed 2 minutes.
  • Stir in enough additional flour to make a soft dough.
  • Turn out onto lightly floured board; knead until smooth and elastic, about 8 to 10 minutes.
  • Place in greased bowl, turning to grease top.
  • Cover and let rise in warm, draft-free place until double in bulk, about 1 hour.
