Ingredients

  • 8 ounces, weight Penne Pasta
  • 1 jar Prepared Pesto Sauce (8 Oz Jar)
  • 1 whole Medium Onion, Minced
  • 4 cloves Garlic, Minced
  • 2 cans Northern Beans (15 Oz Cans), Drained And Rinsed
  • 1 cup Vegetable Broth
  • Salt And Pepper, to taste
  • Parmesan Cheese, If Desired

Method

  • 1.
  • Cook pasta according to package instructions then drain it and set aside.
  • 2.
  • While pasta cooks, pour the oil from the pesto jar (should be about 2 tablespoons) into a saute pan.
  • Heat over medium heat.
  • Once oil is heated add onions and garlic and saute until onions are transparent.
  • 3.
  • Add beans, vegetable broth, and pesto and heat through (about 5 minutes).
  • 4.
  • Add salt and pepper to taste.
  • 5.
  • Mix in pasta and serve with Parmesan cheese if desired.
