Ingredients
- 6 small eggplants
- 2 medium tomatoes
- 4 Tbsp. cooking oil
- 4 cloves garlic, finely chopped
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 3 eggs, beaten
Method
- Bake eggplants in 350° oven until cooked. This occurs when eggplants swell and the skin bursts. Remove from oven and cool slightly. Peel, cutting hard tops off. Cut into small pieces.
