Ingredients
- 1-1/2 cups (350 ml) dry roasted peanuts
- 1 cup (225 ml) white sugar
- 1/2 cup (125 ml) light corn syrup
- pinch salt
- 1 tbsp (15 ml) butter
- 1 tsp (5 ml) vanilla
- 1 tsp (5 ml) baking soda
Method
- Grease cookie sheet.
- In microwave safe bowl, mix peanuts, sugar, corn syrup and salt.
- Cook in microwave for 6 to 7 minutes on high, mixture should be bubbly and peanuts browned.
- Stir in butter and cook 2 to 3 minutes more.
- Quickly stir in baking soda, just til it is foamy.
- Pour immediatley on cookie sheet.
- Let cool 15 minutes, til set.
- Break into pieces.
- Store in an airtight container.
