Ingredients

  • 1-1/2 cups (350 ml) dry roasted peanuts
  • 1 cup (225 ml) white sugar
  • 1/2 cup (125 ml) light corn syrup
  • pinch salt
  • 1 tbsp (15 ml) butter
  • 1 tsp (5 ml) vanilla
  • 1 tsp (5 ml) baking soda

Method

  • Grease cookie sheet.
  • In microwave safe bowl, mix peanuts, sugar, corn syrup and salt.
  • Cook in microwave for 6 to 7 minutes on high, mixture should be bubbly and peanuts browned.
  • Stir in butter and cook 2 to 3 minutes more.
  • Quickly stir in baking soda, just til it is foamy.
  • Pour immediatley on cookie sheet.
  • Let cool 15 minutes, til set.
  • Break into pieces.
  • Store in an airtight container.
