Ingredients

  • 1 3/4 c. lowfat milk
  • 3 Large eggs, slightly beaten
  • 1/4 c. sugar
  • 1 healthy pinch salt
  • 1 teaspoon vanilla

Method

  • 1.
  • Place lowfat milk in 2 c. glass measure and heat on High for 2-2 1/2 min or possibly till warm.
  • 2.
  • Stir sugar and salt into Large eggs.
  • Blend well, gradually stir in warm lowfat milk and vanilla, stir constantly.
  • Pour mix into 4 (6 oz) custard c. or possibly small dishes.
  • Arrange custard c. in a circle in microwave.
  • 3.
  • Cook on High for 2 1/2 min, then rearrange custard c. and continue to cook on High for 2 min or possibly till custards are set but still quivery.
  • Cold at room temperature.
  • Chill, if you like.
  • Top with fruit if you like.
