Ingredients

  • 4 None large flour tortillas
  • 1 lb ground beef
  • 2 tbsp chili sauce
  • 1 tbsp Cajun spice mix
  • 1/2 head iceberg lettuce, shredded
  • 1 (15 oz) can corn, drained, rinsed
  • 1 (13.5 oz) can four bean mix, drained, rinsed
  • 1 None tomato, chopped
  • 1 None avocado, mashed
  • 1/2 None red onion, thinly sliced
  • None None sour cream, to serve

Method

  • Preheat oven to 400°F. Lightly coat tortillas with oil. Press into 4 ovenproof bowls, folding to fit. Bake for 8-10 mins, until crisp and golden. Set aside.
  • Meanwhile, heat an oiled frying pan over high heat. Brown ground beef for 4-5 mins. Add chili sauce and spice mix. Cook, stirring, for 1 min. Season. Set aside to cool.
  • Fill tortilla bowls with lettuce and ground beef mixture. Top with corn, beans, tomato, avocado and onion. Serve with sour cream.
