Ingredients

  • 6 egg whites (at room temperature)
  • 1/4 tsp. salt
  • 1 1/2 c. superfine sugar
  • 1 tsp. vanilla
  • 1 pt. fresh strawberries
  • Lemon Curd

Method

  • Preheat oven to 200°.
  • Put egg whites and salt in bowl of mixer.
  • Beat until foamy.
  • Gradually add sugar until 1 1/4 cups have been added.
  • Beat until not grainy.
  • Fold in remaining 1/4 cup sugar and the vanilla into meringue.
  • Fill a pastry bag with mixture and pipe onto lightly greased cookie sheet.
  • Bake 1 hour until completely dry.
  • Remove from pan and put on rack to cool. Fill each cup with Lemon Curd and top with fresh strawberries.
