Ingredients
- 6 egg whites (at room temperature)
- 1/4 tsp. salt
- 1 1/2 c. superfine sugar
- 1 tsp. vanilla
- 1 pt. fresh strawberries
- Lemon Curd
Method
- Preheat oven to 200°.
- Put egg whites and salt in bowl of mixer.
- Beat until foamy.
- Gradually add sugar until 1 1/4 cups have been added.
- Beat until not grainy.
- Fold in remaining 1/4 cup sugar and the vanilla into meringue.
- Fill a pastry bag with mixture and pipe onto lightly greased cookie sheet.
- Bake 1 hour until completely dry.
- Remove from pan and put on rack to cool. Fill each cup with Lemon Curd and top with fresh strawberries.
