Ingredients

  • 1.5 cups Rolled Oats
  • 1/4 cup Cashew Pieces
  • 1/4 cup Cashew Butter
  • 1 tablespoon Chia Seeds
  • 1/4 teaspoon Cinnamon
  • 1 pinch Salt
  • 1/4 cup Dark Chocolate
  • 2 tablespoons Maple Syrup
  • 2 tablespoons Melted Coconut Oil
  • 1 Egg White

Method

  • Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
  • Place all dry ingredients in a large bowl beside the dark chocolate chips.
  • In a small bowl, melt the coconut oil and cashew butter together.
  • Then mix in everything else besides the egg whites.
  • Pour the wet into the dry and mix until well combined.
  • Next crack in the egg white and mix until well combined.
  • Place on the baking sheet in one layer and bake for 15-minutes.
  • After 15-minutes, stir the granola and break up any large clusters.
  • Bake for another 10-15-minutes until golden brown.
  • Let cool for 10-15-minutes before adding dark chocolate chips and store in a mason jar.
