Ingredients

  • 5 medium potatoes peeled and chopped in half
  • 1 tbsp salt
  • 1 water to cover
  • 2 tbsp oil
  • 1 tbsp herb de provence
  • 1 tsp each of paprika,caynenne pepper and garlic powder

Method

  • Wash ,peel and half the potatoes
  • Put in a pot add salt and cover with water
  • Bring to a boil then reduce to a simmer for five minutes to soften slightly
  • Drain potatoes and return to pot place lid on pot and shake to rough up the edges
  • In a roasting tray add two tablespoons of oil ,then add the potatoes roll around the oil to coat
  • Now season with salt and pepper and Ur favourite herbs I spices I added paprika, garlic powder, cayenne pepper and herb de provence
  • Pre heat oven to 200C/400F add seasoned potatoes and bake for 45-50 minutes until crispy and golden server with a hearty roast dinner
