Ingredients
- 2 bunches of trimmed rocket
- 1 large sliced ripe avocado.
- 3 1/2 tbsp macadamia oil
- 1 tbsp white wine vinegar
- 1/4tsp sugar
- 1/2 tsp dijon mustard
- salt and pepper
- 3/4 cup toasted coarsely chopped macadamia nuts
- 1/4 preserved lemon (rind only, finely chopped)
- 5 large cooked, shelled and deveined king prawns.
Method
Combine 2 bunches of trimmed rocket in a large bowl with one large sliced ripe avocado.
Combine 3 1/2 tbsp macadamia oil, 1 tbsp white wine vinegar, 1/4 tsp sugar, 1/2 tsp dijon mustard with salt and pepper in a bowl and whisk until smooth.
Drizzle half the dressing over rocket and avocado and toss gently to combine. Spread rocket and avocado on 4 large serving plates. Sprinkle with 3/4 cup toasted coarsely chopped macadamia nuts, 1/4 preserved lemon (rind only, finely chopped) and top each plate with 5 large cooked, shelled and deveined king prawns.
To serve
Drizzle salads with remaining dressing. Serve with crusty bread.
