Ingredients

  • 2 bunches of trimmed rocket
  • 1 large sliced ripe avocado.
  • 3 1/2 tbsp macadamia oil
  • 1 tbsp white wine vinegar
  • 1/4tsp sugar
  • 1/2 tsp dijon mustard
  • salt and pepper
  • 3/4 cup toasted coarsely chopped macadamia nuts
  • 1/4 preserved lemon (rind only, finely chopped)
  • 5 large cooked, shelled and deveined king prawns.

Method

Combine 2 bunches of trimmed rocket in a large bowl with one large sliced ripe avocado.

Combine 3 1/2 tbsp macadamia oil, 1 tbsp white wine vinegar, 1/4 tsp sugar, 1/2 tsp dijon mustard with salt and pepper in a bowl and whisk until smooth.

Drizzle half the dressing over rocket and avocado and toss gently to combine. Spread rocket and avocado on 4 large serving plates. Sprinkle with 3/4 cup toasted coarsely chopped macadamia nuts, 1/4 preserved lemon (rind only, finely chopped) and top each plate with 5 large cooked, shelled and deveined king prawns.

To serve

Drizzle salads with remaining dressing. Serve with crusty bread.
