Ingredients

  • 1 c. flour
  • 1/2 c. oleo
  • 1/4 c. confectioners sugar
  • 2 eggs
  • 1 c. sugar (regular)
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 Tbsp. lemon juice
  • grated lemon rind

Method

  • Blend the first 3 ingredients together and press evenly into an ungreased 8 x 8-inch square pan.
  • Bake for 20 minutes at 350°. Beat the remaining ingredients until light and fluffy; pour over hot crust.
  • Bake 20 minutes more; do not overbake.
  • Sprinkle with confectioners sugar.
  • Cut into 2-inch squares.
  • Makes 16 squares.
