Ingredients

  • 8 tbsp (1 stick) butter, melted
  • 2 tsp finely grated lemon peel
  • 3 None eggs, separated
  • 1/2 cup self-rising flour
  • 1/3 cup lemon juice
  • 1 1/3 cups milk

Method

  • Preheat the oven to 350°F. Grease six 1-cup baking dishes.
  • Combine butter, lemon peel, sugar and egg yolks in large bowl. Stir in sifted flour then lemon juice. Gradually stir in milk. Mixture should be smooth and runny.
  • Beat egg whites in medium bowl with electric mixer until soft peaks form. Fold into lemon mixture, in two batches.
  • Place baking dishes in large baking pan. Divide lemon mixture among dishes. Add enough boiling water to baking pan to come halfway up sides of dishes.
  • Bake puddings about 45 mins.
