Ingredients
- 2 c. + 4 Tbsp. flour
- 1 c. butter
- 1/2 c. confectioners sugar
- 4 eggs
- 5 Tbsp. fresh lemon juice
- 2 c. sugar
- 1/2 tsp. baking soda
Method
- Mix 2 c. flour, butter, and confectioners sugar well.
- Work with hands, kneading it until it is a good consistency dough. Transfer to a baking dish.
- Using the palm of your hand, pat down evenly until you have one uniform layer in the bottom of the pan. Bake at 350 degrees for 30 minutes.
- Remove from oven.
- Beat eggs well and mix in lemon juice.
- Add all other ingredients and blend thoroughly.
- Spread this evenly over the first layer and return to 350 degree oven for another 25 minutes or until the second layer is firm.
- It must not be runny at all.
- Remove from oven and cool. Sprinkle top lightly with powdered sugar.
- Cut into bars.
- Makes 24 bars.
