Ingredients

  • 2 Tbsp. butter
  • 2 sq. unsweetened chocolate
  • 3 c. sugar
  • 1 c. milk
  • 1/4 c. honey
  • 1/8 tsp. salt
  • 1 tsp. vinegar
  • 1 tsp. vanilla
  • 1/2 c. chopped nuts

Method

  • Melt butter and chocolate in saucepan.
  • Add sugar, milk, honey and salt.
  • Bring to a boil; cover and boil 2 minutes.
  • Uncover and cook, without stirring, until a small amount of the mixture dropped in cold water forms a soft ball (238° on a candy thermometer).
  • Remove from heat; add vinegar.
  • Let stand until lukewarm.
  • Then add vanilla and beat until thick and mixture loses its gloss.
  • Add nuts and turn out on buttered plate.
  • Let stand until cool enough to handle.
  • Knead with fingers for 4 to 5 minutes.
  • Shape into two rolls, each about 2-inches in diameter. Wrap in wax paper and slice when cool.
