- 2 c. cooked, diced chicken
- 1 can Ro-Tel
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1/2 can chicken broth
- 1 can whole kernel corn, drained
- 1 pkg. soft corn tortillas, torn in small pieces
- 1 large onion, chopped
- 1/2 c. bell pepper
- 1 small can sliced ripe olives, drained
- 1 c. grated Cheddar cheese
Method
- Mix all ingredients, except cheese, in a greased 2-quart casserole dish.
- Sprinkle cheese on top and bake at 350° for 1 hour.
