- 2 c. diced chicken, cooked
- 1 can Ro-Tel tomatoes
- 1 can cream of mushroom soup
- 2 c. chicken broth
- 2 c. Cheddar cheese
- 12 flour tortillas
- 1 bell pepper, diced
- 1 diced onion
- 1 can cream of chicken soup
Method
- Saute onions and bell pepper.
- Layer as follows:
- tortilla on bottom, 1/2 chicken, 1/2 green pepper/onion, 1/2 cheese, 1/2 mixture of soups.
- Repeat.
- Cook at 300° to 350° for 40 minutes to 1 hour.
