Ingredients

  • 5 large king oyster
  • 1tbsp. butter
  • 5 strips bacon
  • 1/2 green onion
  • 1/2 onion
  • Pinch of salt
  • Pinch of black pepper
  • 1tbsp. olive oil
  • 3tbsp. bread crumbs
  • 1/2 tbsp minced parsley
  • 50 g mozzarella cheese
  • 25 g parmesan cheese

Method

  • 1. Preheat oven to 425 F. Cut king oyster mushrooms 3cm in length. Slightly scoop out some insides of the mushrooms and use it in step 2.
  • 2. Finely chop the bacon, green onion , scooped mushroom and onion. Heat a skillet on medium heat. Add olive oil and fry bacon and onions. Add salt and pepper to taste. Set aside in a small bowl. Add bread crumbs and parsley and mix together.
  • 3. Fill the mushrooms with the mixture and top it with mozzarella cheese. Place on a cookie sheet and bake for 7-8 minutes.
  • 4. Take them out of the oven and sprinkle with Parmesan cheese.
