- Tuscan Kale, ribs removed, sliced down the middle and then across
- Dried cranberries
- Can of cannelini (white) beans
- Juice of 1/2 orange
- 1t honey or maple syrup
- 1/2 shallot finely diced
- 2 T olive oil
- Red Pepper flakes
- 1/2 t kosher salt
- Mixed fresh ground pepper
- Pumpkin seeds
- Parmesan, thinly shaved
Method
- Mix down to fresh pepper and refrigerate over night.
- Add pumpkin seeds and shaved parmesan and serve.
