Ingredients

  • 1 9 inch pie crust unbaked
  • 4 slices bacon
  • 1/4 cup onions chopped
  • 1 1/2 cups milk
  • 3 eggs slightly beaten
  • 1/4 tsp. pepper
  • pinch nutmeg
  • 2 cups sharp cheese grated (if you use mild cheese, add some salt)

Method

  • Fry bacon until crisp.
  • Remove from pan and chop.
  • Discard all but 2 tbsp grease.
  • Saute onion in this until tender.
  • Heat milk, add slightly beaten eggs.
  • Mix with remainder of ingredients.
  • Pour into pie crust.
  • Preheat oven to 425.
  • Bake for 10 minutes.
  • Turn the temp. down to 350 and continue baking until set and lightly browned on top, about 35- 45 minutes.
