Ingredients
- Small can of Mandarin oranges, drained, reserving juice
- 1/2 cup dried cranberries
- Dressing:
- 1/4 cup orange juice
- 1/4 cup olive oil
- 4 tablespoons white wine vinegar
- 2 tablespoons grated orange peel
- 6 cups mixed baby greens
- 1 cup pecans, toasted
Method
- Microwave to simmer juice from canned mandarin oranges and, if necessary, add enough orange juice to equal 1 cup. Add cranberries to juice and let stand until softened approximately 30 minutes.
- Whisk dressing ingredients. Season to taste with salt & pepper.
- To salad greens, add mandarin oranges, drained cranberries and pecans.
