Ingredients

  • Small can of Mandarin oranges, drained, reserving juice
  • 1/2 cup dried cranberries
  • Dressing:
  • 1/4 cup orange juice
  • 1/4 cup olive oil
  • 4 tablespoons white wine vinegar
  • 2 tablespoons grated orange peel
  • 6 cups mixed baby greens
  • 1 cup pecans, toasted

Method

  • Microwave to simmer juice from canned mandarin oranges and, if necessary, add enough orange juice to equal 1 cup. Add cranberries to juice and let stand until softened approximately 30 minutes.
  • Whisk dressing ingredients. Season to taste with salt & pepper.
  • To salad greens, add mandarin oranges, drained cranberries and pecans.
