Ingredients

  • 1 chicken, boiled until done and deboned
  • 2 c. flour
  • 1 egg
  • 3/4 c. milk
  • 1/2 tsp. baking powder
  • 2 tsp. salt
  • 3 Tbsp. shortening

Method

  • Boil chicken in water until done; debone chicken and return to broth.
  • Bring to a boil.
  • Prepare dumplings by mixing together the flour, egg, milk, baking powder, salt and shortening.
  • Knead thoroughly and roll out on a floured board.
  • Slice and place in boiling chicken broth.
  • Salt and pepper broth to taste.
  • Cook slowly, uncovered, for 10 minutes and covered for 30 minutes. Stir occasionally.
