Ingredients

  • 2 cups sugar
  • 2/3 cup lard
  • 2 eggs
  • 2 cups buttermilk
  • 3 cups all-purpose flour
  • 1 1/2 teaspoons cloves
  • 1 1/2 teaspoons allspice
  • 2 teaspoons cinnamon
  • Pinch salt
  • 1 teaspoon vanilla
  • 2 tablespoons cocoa
  • 2 teaspoons soda
  • 3/4 cup jam
  • 3/4 cup black walnuts

Method

  • Heat oven to 350 degrees.
  • Cream sugar and lard.
  • Add eggs.
  • Beat well.
  • Sift flour with cloves, allspice, salt, soda, cinnamon and cocoa. Add to sugar mixture alternately with buttermilk.
  • Add jam and nuts.
  • Makes three layers. Bake 25 minutes or until toothpick test shows it's done.
