Ingredients

  • 2 1/2 c. corn meal
  • 1 c. plain flour
  • 2 Tbsp. sugar
  • 1 Tbsp. salt
  • 4 tsp. baking powder
  • 3 eggs
  • 1 1/2 c. milk
  • 1/2 c. cooking oil
  • 1 (16 oz.) can creamed corn
  • 6 or 8 jalapeno peppers
  • 1 large onion
  • 2 c. grated cheese

Method

  • In a large bowl, mix together corn meal, flour, sugar, salt and baking powder.
  • Then add eggs, milk and oil to the corn meal mixture.
  • Stir in chopped jalapeno peppers, onion and cheese. Pour into a well-oiled pan and bake at 425° for 45 minutes.
