Ingredients

  • 1 onion, large
  • 2 carrots, peeled
  • 2 celery ribs
  • 4 -6 garlic
  • 1 lb ground beef
  • 1 lb Italian sausage, bulk
  • 2 cups red wine
  • 36 ounces tomatoes, ground
  • 12 teaspoon dried rosemary
  • 12 teaspoon dried sage
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 14-12 teaspoon red pepper flakes
  • 4 tablespoons fresh parsley, chopped
  • 12 tablespoon italian seasoning
  • 24 ounces marinara sauce, I like newmans cabernet marinara
  • 1 12 cups bell peppers, diced mixed colors, not green pepper
  • 1 cup spinach, fresh chop slightly

Method

  • Place first 4 ingredients in processor and fine chop.You may also do tomatoes in processor.Use fresh ,canned or frozen or thawed tomatoes with puree.
  • Cook and drain meats.
  • Add all to large pot and bring to boil,simmer on low for 2 hours.
  • Serve with cooked tortelloni and drained top with parmesean cheese.Full recipe takes 4 pound tortelloni -- Adjust to your needs.
