Ingredients

  • 2 lbs hot Italian sausage
  • 1 cup green bell pepper, julienned
  • 1 cup red bell pepper, julienned
  • 2 jalapenos, sliced
  • 1 cup onion, sliced
  • 3 tablespoons olive oil
  • 1 cup tomato sauce
  • 1 cup cherry tomatoes, chopped

Method

  • 1.)
  • Preheat either one large or two medium skillets to medium and cook the sausages until brown on all sides.
  • 2.)
  • Remove the sausages and add the oil.
  • 3.)
  • Add the peppers and onions and cook until peppers begin to soften.
  • 4.)
  • Add the sausages back into the pan(s) and pour over the tomato sauce and chopped tomatos.
  • 5.)
  • Cook until the sauce reduces and is no longer runny.
  • 6.)
  • Serve on a toasted club roll.
