Ingredients
- 2 lbs hot Italian sausage
- 1 cup green bell pepper, julienned
- 1 cup red bell pepper, julienned
- 2 jalapenos, sliced
- 1 cup onion, sliced
- 3 tablespoons olive oil
- 1 cup tomato sauce
- 1 cup cherry tomatoes, chopped
Method
- 1.)
- Preheat either one large or two medium skillets to medium and cook the sausages until brown on all sides.
- 2.)
- Remove the sausages and add the oil.
- 3.)
- Add the peppers and onions and cook until peppers begin to soften.
- 4.)
- Add the sausages back into the pan(s) and pour over the tomato sauce and chopped tomatos.
- 5.)
- Cook until the sauce reduces and is no longer runny.
- 6.)
- Serve on a toasted club roll.
