Ingredients
- 1/2 lb. bacon
- 1/4 c. drippings
- 1/2 c. celery, cut up
- 1/2 c. onion, diced
- 3 Tbsp. sugar
- 1 Tbsp. flour
- 1 1/2 tsp. salt
- 1/2 tsp. celery seed
- 1/4 tsp. pepper
- 1/2 c. water
- 1/3 c. vinegar
- 5 potatoes (4 c.)
Method
- Cook bacon over low heat until crisp; drain and crumble.
- Add celery and onion to 1/4 cup drippings and saute until tender. Combine sugar, flour and seasonings.
- Stir into the drippings. Add water and vinegar; stir until smooth.
- Bring to a boil and add potatoes and bacon.
- Toss.
- Serves 6.
