Ingredients

  • 1/2 lb. bacon
  • 1/4 c. drippings
  • 1/2 c. celery, cut up
  • 1/2 c. onion, diced
  • 3 Tbsp. sugar
  • 1 Tbsp. flour
  • 1 1/2 tsp. salt
  • 1/2 tsp. celery seed
  • 1/4 tsp. pepper
  • 1/2 c. water
  • 1/3 c. vinegar
  • 5 potatoes (4 c.)

Method

  • Cook bacon over low heat until crisp; drain and crumble.
  • Add celery and onion to 1/4 cup drippings and saute until tender. Combine sugar, flour and seasonings.
  • Stir into the drippings. Add water and vinegar; stir until smooth.
  • Bring to a boil and add potatoes and bacon.
  • Toss.
  • Serves 6.
