- 7 c. green cucumbers
- 3 c. onion
- 2 red mango peppers
- 2 green mango peppers
- 1/3 c. salt
- 4 c. apple cider vinegar
- 4 1/2 c. sugar
- 2 1/2 tsp. celery seed
- 2 1/2 tsp. mustard seed
- 2 tsp. turmeric
- 2 1/2 tsp. ginger
- salt and pepper to taste
Method
- Grind all vegetables with coarse grinder or chop fine.
- In a large kettle or canner, combine all ingredients.
- Boil 10 to 15 minutes, stirring.
- Pour into sterilized jars.
- Approximate yield is 5 pints.
