Ingredients
- 250g plain flour
- 50g butter
- 10g salt
- 1 tsp dried basil
- 2 eggs
- 2 tbsp tarragon, chopped
- 2 tbsp chives, chopped
- 2 tbsp parsley, chopped
- 2 tbsp chervil, chopped
- Freshly ground black pepper
- 300g log soft, fresh goat's cheese
Method
For the lavosh
Preheat oven to 170C. Place flour, butter, salt and basil in a food processor and process until butter is a fine crumb. Add eggs. Wrap in cling film and rest in the fridge for four hours.
Roll to one-millimetre thickness on a lightly floured bench or between two sheets of baking paper. Cut into rectangles 10 centimetres by seven centimetres. Place on baking trays and brush lightly with water. Bake for eight minutes or until light golden.
For herbed cheese
Mix herbs and pepper in a bowl. Roll cheese in mixture to cover. Slice and serve with crackers.
