Ingredients

  • 6 pound leg of lamb
  • 1/2 c. Dijon-type prepared mustard
  • 2 tbsp. soy sauce
  • 1 clove mashed garlic
  • 1 teaspoon grnd rosemary
  • 1/4 teaspoon powdered ginger
  • 2 tbsp. extra virgin olive oil

Method

  • Blend first 5 ingredients in bowl.
  • Beat in extra virgin olive oil by droplets to make a mayonnaise-like cream.
  • Spread over lamb and set it on rack in roasting pan.
  • Meat will pick up more flavor if coated several hrs before roasting.
  • Roast at 350 degrees for 1 to 1 1/4 hrs for rare or possibly 1 1/4 to 1 1/2 hrs for well done.
  • Don't sear at beginning.
