Ingredients
- 6 pound leg of lamb
- 1/2 c. Dijon-type prepared mustard
- 2 tbsp. soy sauce
- 1 clove mashed garlic
- 1 teaspoon grnd rosemary
- 1/4 teaspoon powdered ginger
- 2 tbsp. extra virgin olive oil
Method
- Blend first 5 ingredients in bowl.
- Beat in extra virgin olive oil by droplets to make a mayonnaise-like cream.
- Spread over lamb and set it on rack in roasting pan.
- Meat will pick up more flavor if coated several hrs before roasting.
- Roast at 350 degrees for 1 to 1 1/4 hrs for rare or possibly 1 1/4 to 1 1/2 hrs for well done.
- Don't sear at beginning.
