Ingredients
- 1 lb. carrots
- 1 can juice packed pineapple tidbits
- cornstarch
- coconut flakes (optional)
Method
- Peel and slice carrots.
- Cook until just tender.
- Combine cooking liquid with the juice from the can of pineapple tidbits. Thicken the carrot and pineapple juices with cornstarch.
- Cook until thick and bubbly.
- Add the carrots and pineapple; heat through.
- A handful of coconut flakes may be tossed in.
