Ingredients
- 4 (10 oz.) pkg. frozen spinach
- 2 Tbsp. oleo or butter
- 1/2 c. mayo (low fat)
- 3 tomatoes
- 1/4 c. oleo or butter
- 1/2 lb. mushrooms, sliced
- 1/2 c. low-fat sour cream
- 1/2 c. Parmesan cheese, grated
- 1/2 c. dry bread crumbs
Method
- Cook spinach and drain.
- Saute mushrooms in butter.
- Combine sour cream, mayo and cheese.
- Stir in spinach and mushrooms. Season with salt and pepper.
- Pour in a 9 x 13-inch greased dish. Slice tomatoes 1/2 inch and place on top.
- Saute bread crumbs in butter and put on top of tomatoes.
- Bake at 325° for 20 minutes. Serves 10 to 12.
