Ingredients

  • 4 (10 oz.) pkg. frozen spinach
  • 2 Tbsp. oleo or butter
  • 1/2 c. mayo (low fat)
  • 3 tomatoes
  • 1/4 c. oleo or butter
  • 1/2 lb. mushrooms, sliced
  • 1/2 c. low-fat sour cream
  • 1/2 c. Parmesan cheese, grated
  • 1/2 c. dry bread crumbs

Method

  • Cook spinach and drain.
  • Saute mushrooms in butter.
  • Combine sour cream, mayo and cheese.
  • Stir in spinach and mushrooms. Season with salt and pepper.
  • Pour in a 9 x 13-inch greased dish. Slice tomatoes 1/2 inch and place on top.
  • Saute bread crumbs in butter and put on top of tomatoes.
  • Bake at 325° for 20 minutes. Serves 10 to 12.
