Ingredients

  • 3 5/16 pounds stewing steak
  • 3 onions peeled and coarsely diced
  • 3 1/2 ounces smoked streaky bacon diced
  • 3 5/8 cups mushrooms halved
  • 2 tablespoons oil
  • 3 slices pumpernickel bread crumbled
  • 1 cup dark beer
  • 3 1/8 cups bouillon
  • 4 gherkins sliced
  • 1 9/16 cups pickled onions drained
  • 7/8 cup sour cream

Method

  • Preheat oven to 400°F. Heat oil in a roasting pan and sear meat. Add bacon, onions and mushrooms and saute for 4-5 mins. Season then add crumbled bread. Add beer and stock. Bring to a boil, cover and cook for about 1 1/2 hours. About 5 mins before end of cooking time, add pickles and pickled onions to stew. Serve sprinkled with black pepper and a dollop of sour cream.
