Ingredients
- 1 1/4 c. (2 1/2 sticks) butter
- 2/3 c. brown sugar, packed
- 1/3 c. granulated sugar
- 1 egg
- 1 teaspoon vanilla
- 1 c. unbleached flour
- 1/2 c. whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 1/2 c. oats (quick)
- 1/2 c. oat bran
- 3/4 c. raisins
Method
- Preheat oven to 375 degrees.
- In small bowl measure out flour, baking soda, salt, oatmeal and oat bran.
- In large bowl cream butter and sugars.
- Add in egg and vanilla; beat till smooth.
- Gradually add in dry ingredients.
- Stir in raisins.
- Drop by spoonfuls onto ungreased cookie sheet.
- Bake 8-10 min.
- Makes approximately 2 dozen cookies.
