Ingredients

  • 4 whole Boneless, Skinless Chicken Breasts
  • 1 pinch Salt And Pepper
  • 5 whole Vine-ripened Tomatoes, Chopped
  • 1 clove Garlic, Minced
  • 1/2 whole Red Onion, Chopped
  • 1 teaspoon Olive Oil
  • 1 teaspoon Balsamic Vinegar
  • 18 teaspoons Sea Salt
  • 13 cups Chopped Fresh Basil (or More As Desired)

Method

  • Preheat oven to 375 F. Put your chicken breasts into a baking dish.
  • Sprinkle some salt and pepper over top, cover and bake for about 35 to 40 minutes (depending on the size of your chicken breasts) or until juices run clear.
  • Meanwhile, combine chopped tomatoes, garlic, red onion, olive oil, balsamic vinegar, sea salt and basil in a bowl.
  • Refrigerate until chicken is ready to be served.
  • When chicken is done remove it from the oven, plate it and spoon the tomato mixture over top of the chicken.
