Ingredients

  • 1 Tbsp. butter or margarine
  • 1 cup thinly sliced carrots
  • 2 Tbsp. finely chopped onions King Sooper's 1 lb For $0.99 thru 02/09
  • 1/2 cup raisins
  • 3/4 cup apple juice
  • 2 Tbsp. fresh lemon juice Safeway 4 ct For $5.00 thru 02/09
  • 2 Tbsp. light brown sugar
  • 1 tsp. salt
  • 1 tsp. finely chopped fresh thyme
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground cardamom
  • 3 cups cooked MINUTE Brown Rice
  • 2 cups sliced apples
  • 1 Tbsp. pine nuts, toasted

Method

  • Melt butter in large skillet on medium heat.
  • Add carrots and onions; cook and stir 5 min.
  • or until crisp-tender.
  • Add raisins, juices, sugar and seasonings; mix well.
  • Reduce heat to low; cover.
  • Simmer 10 min.
  • Stir in rice and apples; cook until heated through, stirring occasionally.
  • Sprinkle with pine nuts.
