- 1 Tbsp. butter or margarine
- 1 cup thinly sliced carrots
- 2 Tbsp. finely chopped onions King Sooper's 1 lb For $0.99 thru 02/09
- 1/2 cup raisins
- 3/4 cup apple juice
- 2 Tbsp. fresh lemon juice Safeway 4 ct For $5.00 thru 02/09
- 2 Tbsp. light brown sugar
- 1 tsp. salt
- 1 tsp. finely chopped fresh thyme
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground cardamom
- 3 cups cooked MINUTE Brown Rice
- 2 cups sliced apples
- 1 Tbsp. pine nuts, toasted
Method
- Melt butter in large skillet on medium heat.
- Add carrots and onions; cook and stir 5 min.
- or until crisp-tender.
- Add raisins, juices, sugar and seasonings; mix well.
- Reduce heat to low; cover.
- Simmer 10 min.
- Stir in rice and apples; cook until heated through, stirring occasionally.
- Sprinkle with pine nuts.
