Ingredients

  • 1 1/2 c. lentils
  • 2 medium onions
  • 1 clove minced garlic or 1/8 tsp. garlic powder
  • 1/2 to 1 lb. lean ground beef
  • 2 beef bouillon cubes
  • 1/4 to 1/2 c. brown rice
  • 1 tsp. sugar
  • 1/2 tsp. cumin powder (may omit)
  • 1/2 tsp. pepper
  • 1 Tbsp. cider vinegar
  • 1 tsp. salt or to taste

Method

  • Saute onions, garlic (or powder) and ground beef; add 1 quart vegetable stock or water bouillon, lentils, rice, cumin, pepper and sugar.
  • Cover and simmer 1 hour until rice and lentils are tender and liquid is absorbed.
  • Add water if necessary.
  • Stir in vinegar and salt.
  • Serve with fried eggplant and yogurt or tossed salad and bread.
