Ingredients
- 1 1/2 c. lentils
- 2 medium onions
- 1 clove minced garlic or 1/8 tsp. garlic powder
- 1/2 to 1 lb. lean ground beef
- 2 beef bouillon cubes
- 1/4 to 1/2 c. brown rice
- 1 tsp. sugar
- 1/2 tsp. cumin powder (may omit)
- 1/2 tsp. pepper
- 1 Tbsp. cider vinegar
- 1 tsp. salt or to taste
Method
- Saute onions, garlic (or powder) and ground beef; add 1 quart vegetable stock or water bouillon, lentils, rice, cumin, pepper and sugar.
- Cover and simmer 1 hour until rice and lentils are tender and liquid is absorbed.
- Add water if necessary.
- Stir in vinegar and salt.
- Serve with fried eggplant and yogurt or tossed salad and bread.
