Ingredients

  • 1 small cucumber - peeled and diced
  • 1 small red pepper - cut into 1/4's and seeded
  • 1 small green pepper - cut into 1/4's and seeded
  • 3 7" pita breads
  • 5 scallions
  • 2 tomatoes - seeded and chopped
  • olive oil
  • 1/3 c. olive oil
  • 1/4 c. fresh lemon juice
  • 1/4 c. each chopped parsley and fresh mint
  • 1 garlic clove - crushed
  • 2 T. Tahini
  • salt and black pepper to taste

Method

  • Brush pita, red and green peppers, and scallions with olive oil. Grill over medium heat until pita are crisp, and vegetables are lightly grilled but still crisp.
  • Large dice grilled peppers and scallion. Break pita into bite sized pieces.
  • Whisk together 1/3c. olive oil - tahini.
  • In a large bowl, toss all vegetables and pita pieces with dressing. Season to taste with salt and pepper.
