- 1 small cucumber - peeled and diced
- 1 small red pepper - cut into 1/4's and seeded
- 1 small green pepper - cut into 1/4's and seeded
- 3 7" pita breads
- 5 scallions
- 2 tomatoes - seeded and chopped
- olive oil
- 1/3 c. olive oil
- 1/4 c. fresh lemon juice
- 1/4 c. each chopped parsley and fresh mint
- 1 garlic clove - crushed
- 2 T. Tahini
- salt and black pepper to taste
Method
- Brush pita, red and green peppers, and scallions with olive oil. Grill over medium heat until pita are crisp, and vegetables are lightly grilled but still crisp.
- Large dice grilled peppers and scallion. Break pita into bite sized pieces.
- Whisk together 1/3c. olive oil - tahini.
- In a large bowl, toss all vegetables and pita pieces with dressing. Season to taste with salt and pepper.
