Ingredients

  • 2 tablespoons lemon juice, divided
  • 1 teaspoon olive oil
  • 1/2 teaspoon pepper, divided
  • 8 cups packaged European-style Italian salad greens (romaine, radicchio, and endive)
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon dried rosemary
  • 4 (6-ounce) lean center-cut loin veal chops (about 1/2 inch thick)
  • Cooking spray

Method

  • Combine 1 tablespoon lemon juice, oil, and 1/4 teaspoon pepper in a large bowl, stirring well. Add salad greens, and toss to coat.
  • Combine remaining 1 tablespoon lemon juice, remaining 1/4 teaspoon pepper, garlic powder, and rosemary in a bowl; rub mixture over veal.
  • Prepare grill.
  • Coat grill rack with cooking spray; place on grill over hot coals (400° to 500°). Place veal on rack; grill, covered, 3 to 4 minutes on each side or until done. Serve veal on top of greens mixture.
