Ingredients

  • 1/2 c. mayonnaise
  • 1 Tbsp. catsup
  • 1 Tbsp. horseradish
  • 1 Tbsp. fresh parsley, chopped
  • 1/4 tsp. pepper
  • 8 slices rye bread
  • 3/4 lb. sliced corned beef
  • 1 c. sauerkraut
  • 2 Tbsp. butter
  • 4 slices (4 oz.) Gruyere or Alpine Swiss cheese

Method

  • Combine the mayonnaise, catsup, horseradish, parsley and pepper.
  • Spread this sauce on bread.
  • Layer the corned beef and sauerkraut on 4 slices of the bread and top with the cheese. Cover with the remaining bread and spread with 1 tablespoon of the butter.
  • Melt the remaining 1 tablespoon of butter in a large nonstick frying pan over medium heat.
  • Add sandwiches, unbuttered side down, and fry until golden, about 5 minutes on each side. Turn and brown the other side.
