Ingredients

  • 1 pound fresh green beans
  • 1 small ham hock
  • 1 cup water
  • 1 3/4 cups peeled, seeded, and coarsely chopped tomato
  • 1/3 cup canned ready-to-serve chicken broth
  • 1/3 cup Chablis or other dry white wine
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon minced garlic
  • 1 teaspoon dried whole thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Method

  • Wash beans; trim ends, and remove strings. Combine beans, ham hock, and water in a large saucepan. Bring to a boil; cover, reduce heat, and simmer 20 minutes. Stir in tomato and remaining ingredients. Cover and cook over low heat 10 minutes or until beans are tender.
