- 1 teaspoon finely minced garlic
- 1/4 c. extra virgin olive oil
- 3 teaspoon butter
- 1 pound med. shrimp, peeled and deveined
- 3 c. Del Monte tomato wedges, liquid removed
- Salt and pepper
- 1/4 c. bottled clam juice
- 1 teaspoon dry oregano
- 1 teaspoon crushed red pepper flakes
- 3 teaspoon capers, liquid removed
- 1/4 pound Feta cheese
Method
- In large skillet, saute/fry garlic in extra virgin olive oil and butter; remove and throw away garlic.
- Saute/fry shrimp till pink; remove from pan.
- Add in tomatoes and reduce by 1/3.
- Add in clam juice, oregano, pepper flakes, capers, salt, and pepper.
- Mix well.
- Divide 1/2 of sauce among individual baking dishes.
- Divide shrimp proportionately among dishes and spoon remaining sauce over shrimp.
- Crumble Feta cheese over top and bake in preheated oven at 350 degrees for 10-15 min.
- Feta cheese will brown but not heat in this recipe.
