Ingredients

  • 1 teaspoon finely minced garlic
  • 1/4 c. extra virgin olive oil
  • 3 teaspoon butter
  • 1 pound med. shrimp, peeled and deveined
  • 3 c. Del Monte tomato wedges, liquid removed
  • Salt and pepper
  • 1/4 c. bottled clam juice
  • 1 teaspoon dry oregano
  • 1 teaspoon crushed red pepper flakes
  • 3 teaspoon capers, liquid removed
  • 1/4 pound Feta cheese

Method

  • In large skillet, saute/fry garlic in extra virgin olive oil and butter; remove and throw away garlic.
  • Saute/fry shrimp till pink; remove from pan.
  • Add in tomatoes and reduce by 1/3.
  • Add in clam juice, oregano, pepper flakes, capers, salt, and pepper.
  • Mix well.
  • Divide 1/2 of sauce among individual baking dishes.
  • Divide shrimp proportionately among dishes and spoon remaining sauce over shrimp.
  • Crumble Feta cheese over top and bake in preheated oven at 350 degrees for 10-15 min.
  • Feta cheese will brown but not heat in this recipe.
