Ingredients

  • 1 pt. persimmom pulp
  • 1 tsp. baking soda
  • 2 1/2 c. sugar
  • 1 pt. sweet milk
  • 4 eggs, well beaten
  • 4 c. plain flour, sifted
  • 1 tsp. vanilla flavoring
  • 1/2 lb. butter or margarine

Method

  • Make sure that persimmons have been collected after the 1st frost to assure that they will be sweet not bitter.
  • Add soda and sugar to persimmon pulp and beat well.
  • Add milk and beaten eggs and stir in thoroughly.
  • Add sifted flour and beat until smooth. Add butter (melted but not hot) and stir in well.
  • Pour into a greased and floured baking pan.
  • Bake at 350° for 1 hour or until firm and lightly brown.
  • Cut into squares and serve hot or cold.
