Ingredients
- 1 pt. persimmom pulp
- 1 tsp. baking soda
- 2 1/2 c. sugar
- 1 pt. sweet milk
- 4 eggs, well beaten
- 4 c. plain flour, sifted
- 1 tsp. vanilla flavoring
- 1/2 lb. butter or margarine
Method
- Make sure that persimmons have been collected after the 1st frost to assure that they will be sweet not bitter.
- Add soda and sugar to persimmon pulp and beat well.
- Add milk and beaten eggs and stir in thoroughly.
- Add sifted flour and beat until smooth. Add butter (melted but not hot) and stir in well.
- Pour into a greased and floured baking pan.
- Bake at 350° for 1 hour or until firm and lightly brown.
- Cut into squares and serve hot or cold.
