Ingredients

  • 3 large sweet potatoes (3 lb.)
  • 1 c. sugar
  • 2 eggs, beaten lightly
  • 10 Tbsp. butter
  • 1 1/2 tsp. grated orange rind
  • 1/2 tsp. ground ginger
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbsp. finely minced crystallized ginger
  • 1/4 c. flour
  • 1 c. pecans
  • 3/4 c. brown sugar

Method

  • Bake potatoes for 1 hour in 425° oven.
  • Scoop out potato flesh and food process until pureed.
  • In large mixer bowl, place puree, sugar, eggs, 4 tablespoons of butter, orange rind, ground ginger, salt, pepper and crystallized ginger.
  • Blend well and spread in a greased 9 x 13-inch baking dish.
