Ingredients
- 1 c. oats (quick or old-fashioned), uncooked
- 1 c. flour or 1/4 c. oat brand and 3/4 c. flour
- 1 Tbsp. baking powder
- 1/2 tsp. cinnamon
- 1 c. skim milk
- 1/2 c. mashed ripe banana (1 large)
- 1/2 c. raisins or chopped dried apricots, dates or prunes
- 1/4 c. vegetable oil
- 1/4 c. packed brown sugar
- 1 egg white
Method
- Heat oven to 400°.
- Line 12 medium muffin cups with paper baking cups.
- Combine oats, flour, baking powder and cinnamon. Combine remaining ingredients and mix with dry ingredients just until moistened.
