Ingredients

  • 1 c. oats (quick or old-fashioned), uncooked
  • 1 c. flour or 1/4 c. oat brand and 3/4 c. flour
  • 1 Tbsp. baking powder
  • 1/2 tsp. cinnamon
  • 1 c. skim milk
  • 1/2 c. mashed ripe banana (1 large)
  • 1/2 c. raisins or chopped dried apricots, dates or prunes
  • 1/4 c. vegetable oil
  • 1/4 c. packed brown sugar
  • 1 egg white

Method

  • Heat oven to 400°.
  • Line 12 medium muffin cups with paper baking cups.
  • Combine oats, flour, baking powder and cinnamon. Combine remaining ingredients and mix with dry ingredients just until moistened.
