- 1/2 c. pineapple juice
- 1 c. sugar
- 3 c. plain or cake flour
- 1/4 tsp. baking soda
- 1 lb. red cherries (candied)
- 1 box white, seedless raisins
- 1/2 lb. shredded coconut
- 1/2 lb. almonds, blanched and cut up
- 1/2 lb. butter or margarine
- 5 eggs
- 1/2 tsp. cream of tartar
- 1 1/4 lb. pecans
- 1 lb. pineapple (candied)
- 1/3 lb. citron or green cherries
Method
- Cream the butter and sugar; add eggs.
- Sift together 2 cups of flour and other dry ingredients.
- Add dry ingredients alternately with juice.
- Use 1 cup of flour with fruits and coconut before adding them to batter.
- Bake at 250° for 3 hours.
