Ingredients

  • 1/2 c. pineapple juice
  • 1 c. sugar
  • 3 c. plain or cake flour
  • 1/4 tsp. baking soda
  • 1 lb. red cherries (candied)
  • 1 box white, seedless raisins
  • 1/2 lb. shredded coconut
  • 1/2 lb. almonds, blanched and cut up
  • 1/2 lb. butter or margarine
  • 5 eggs
  • 1/2 tsp. cream of tartar
  • 1 1/4 lb. pecans
  • 1 lb. pineapple (candied)
  • 1/3 lb. citron or green cherries

Method

  • Cream the butter and sugar; add eggs.
  • Sift together 2 cups of flour and other dry ingredients.
  • Add dry ingredients alternately with juice.
  • Use 1 cup of flour with fruits and coconut before adding them to batter.
  • Bake at 250° for 3 hours.
