Ingredients

  • 2 c. pecans, cut in pieces
  • 1 1/2 c. brown sugar
  • 1 stick oleo
  • 1 c. unsifted flour (self-rising)
  • 2 eggs
  • 1/2 lb. candied cherries (mixed red and green)
  • 1/2 lb. candied pineapple (red, white and green)

Method

  • Grease and flour a 13 x 9-inch pan.
  • Sprinkle nuts on bottom of pan.
  • Cream the butter and sugar.
  • Add eggs and beat until fluffy.
  • Add flour.
  • Spread batter over nuts.
  • The batter is thick but you can spread it with a spatula.
  • Sprinkle the fruit over the top.
  • Bake at 300° for 1 hour.
  • Cover with foil the last 15 minutes so it won't dry out.
