Ingredients
- 2 c. pecans, cut in pieces
- 1 1/2 c. brown sugar
- 1 stick oleo
- 1 c. unsifted flour (self-rising)
- 2 eggs
- 1/2 lb. candied cherries (mixed red and green)
- 1/2 lb. candied pineapple (red, white and green)
Method
- Grease and flour a 13 x 9-inch pan.
- Sprinkle nuts on bottom of pan.
- Cream the butter and sugar.
- Add eggs and beat until fluffy.
- Add flour.
- Spread batter over nuts.
- The batter is thick but you can spread it with a spatula.
- Sprinkle the fruit over the top.
- Bake at 300° for 1 hour.
- Cover with foil the last 15 minutes so it won't dry out.
