Ingredients
- 1 (2 1/2 to 3 lb.) chicken, cut up and skinned
- juice of 1/2 lime
- 1/2 tsp. salt
- pepper to taste
- 1/2 tsp. curry powder
- 1 c. flour
- 2 c. oil
Method
- Rinse chicken in water with lime juice added; pat dry. Combine salt, pepper, curry powder and flour in bowl; mix well. Dip chicken in mixture to coat.
- Brown chicken in hot oil in skillet.
- Place in 2-quart baking dish.
- Bake at 375° for 20 to 25 minutes, or until chicken is tender.
- Yields 6 servings.
