Ingredients

  • 1 (2 1/2 to 3 lb.) chicken, cut up and skinned
  • juice of 1/2 lime
  • 1/2 tsp. salt
  • pepper to taste
  • 1/2 tsp. curry powder
  • 1 c. flour
  • 2 c. oil

Method

  • Rinse chicken in water with lime juice added; pat dry. Combine salt, pepper, curry powder and flour in bowl; mix well. Dip chicken in mixture to coat.
  • Brown chicken in hot oil in skillet.
  • Place in 2-quart baking dish.
  • Bake at 375° for 20 to 25 minutes, or until chicken is tender.
  • Yields 6 servings.
