- 1 lb. tortellini
- 3/4 lb. Lamagna Ricotta cheese
- 1/2 c. olive oil
- 1/2 c. Parmesan cheese
- 3/4 c. diced pepperoni
- 1 c. chopped broccoli
- 1/2 c. green pepper, cut up
- 1/2 c. red pepper, cut up
- 1/2 tsp. garlic powder
- 1 tsp. dried oregano
- 1 tsp. basil
Method
- Cook tortellini as directed; drain and rinse with cool water. Combine all ingredients in a large bowl; mix.
- Garnish with red and green pepper rings.
- Chill several hours or overnight.
- Serve cold.
